What Vegans Eat – Day 48

Breakfast: Gary and I were off to the Veggie Pride Parade in Manhattan. Responsible Eating And Living had an exhibitor table and I was giving a brief talk. We bundled up, loaded up our banner and promo materials and were off, without breakfast. I packed a couple of pears and 2 bottles of green tea for the trip. At the event there were samples of free food to try. We were too busy at our table to get anything! But the folks from Buddha Bodai were giving out Fortune Cookies, so we had a couple of those.

Dinner: We were beyond hungry when we came home and somehow this beautiful meal came together. Mashed Potatoes and Peas, Polenta Fries and Tomato Sauce, and Kale Salad. I skipped my green juice today – a rare event.

Evening: After a long day talking about food and eating very little, we deserved a treat. I prepared my third creation with our Chocolate Sauce, a buckwheat chocolate mini cake with chocolate sauce, soy ice cream and creamy peanut butter sauce.
