Breakfast: Gary and I took a long walk along the Lexington County Park Reservoir. It took two hours. When we got back I was so thirsty and felt thirsty most of the day. We drank a lot of water, followed by sliced Grapefruit. Then I had a Mango and got to work to prepare for my It’s All About Food show for the day.
Lunch: There was a lot of fresh produce in the pool house. I had bought some irresistible vegetables for a great price when I was in Santa Cruz on Sunday from New Leaf Market. I needed to consume the old to make room for the new. I made a giant salad of the remaining Mix Greens, Arugula, a few new leaves of Kale and fresh chopped Scallions, the leftover Garbanzo/Zucchini/Arugula/Tomato stew and Avocado Mango Grapefruit Salsa. I added in more Avocado and Mango to that. It was BIG and we barely made a dent in eating it.
Snack: More Grapefruits!
Dinner: Gary added some cooked Kidney Beans to the lunch salad mix and it became a filling for our Romaine Lettuce Wraps, topped with Sky Valley Sriracha Salsa. GENIUS!
Evening: Our Corn Thins evening treat needed to be repeated. This time, I prepared one Corn Thin with Peanut Butter and the other with Tahini and topped them both with Apricot Jam. We also had Teavana Rooibos Blueberry Bliss.
