Breakfast: It was April 1st, April Fool’s Day. But when it comes to food, I don’t fool around! I was craving, yes, craving rolled oats with cool unsweetened soy milk, flaked coconut, ground flax seeds and blueberries. I always use frozen blueberries and by the time I get the cereal and tea prepared the blueberries are perfect. I also craved maté tea, made from the Yerba Maté plant. Back in the day, around 1999 when I worked as an engineering consultant I used to visit IBM in Burlington Vermont. I stayed at the Inn at Essex which was affiliated with the New England Culinary Institute and they had a vegan chef, Chef Kevin Dunn! I was in food heaven. I would always have the Yerba Maté Latte by The Republic of Tea with soy milk. They served soy milk! During one visit the Maté Latte was off the menu. I was devastated. I went home and learned how to make my own at home by mixing cocoa powder with maté tea. This is what I had with my breakfast on April 1st. Best of all we ate outdoors on the terrace! It was a little chilly but wonderful to be enjoying the fresh air and not freeze.
Lunch: I can’t believe how nuts I went over this simple dish of cabbage with potatoes and onions, but I did, I really did.
Daily Green Juice: Kale, Collards, Cabbage, Celery, Lemon
Dinner: We were very lucky to be invited by our neighbors to see Lucia di Lammermoor at the Met. The lead tenor called in sick and the amazing Michael Fabiano stepped in to play Edgardo. The lead singers were spectacular and it actually took a lot of energy to participate as an active listener. We were famished when we got home and had a late dinner of pasta with kale and tofu.
The day was complete after some peppermint tea.
