What Vegans Eat – Day 539: Special Travel Edition


Breakfast: Gary made Steel Cut Oats, with Raisins, Sunflower Seeds and Apples and served it with Fresh Strawberries and Sharlyn Melon and Irish Breakfast Tea. I gobbled of the fruit, ate a little of the oats and saved the rest for tomorrow.
Lunch: At lunchtime I was super hungry and couldn’t think. Gary was working and not ready for eating. Fortunate there was some of the leftover Rice/zucchini filling from the Stuffed Zucchini dish I had made the other night. I vaccumed it down and grabbed a handful of cashews.
Daily Green Juice: It’s so wonderful to be able to grab a frozen green juice and then sip it slowly once it had been defrosted, made with Lacinato Kale, Red Kale, Celery, Cucumber and Lemons.
Dinner: We were up for our “Meat and Potatoes” for dinner. Gary made me Lemon Baked Tofu with fresh Lemon Juice from his cousin Nancy’s tree and reheated the Tomato Primavera Sauce and Quinoa he made yesterday. It was gorgeous.
Evening: We had more Trader Joe’s Soy Creamy Black Cherry and Vanilla ice cream with Teavana Rooibos Berry Tea.
