Breakfast: Gary’s got a cold and he needs his rest. I let him sleep and got to work. I made some Darjeeling Tea and nibbled on Almonds with Cacao Nibs.
Lunch: We are running low on basic food items but we had everything required for one of my favorite soups: Carrot Lentil. It’s one of the easiest and fastest soup I can make, it tastes rich and is so nourishing. I kept it on the stove knowing we’d dig in for more later.
Corn Thin with Peanut Butter made everything just right.
Daily Green Juice: Kale, Collards, Celery, Carrots, Lemon
Dinner: We had a Kale Salad topped with Toasted Buckwheat with Onions and Walnuts. I was planning on serving them separately but Gary suggested piling the Buckwheat on the salad. It was a great idea. It looked fabulous and the flavors were lovely together.
The soup from lunch was back, this time blended with a little Cashew Cream making Creamy Carrot Bisque. I topped mine with mushrooms.
Evening: We settled in for the evening, reading, with some Mint Tea and toasted slices of Panettone.
