Breakfast: I couldn’t wait for breakfast! I wanted more Black Thai Peas, rolled in a Brown Rice Tortilla. It was just right, with a little Sky Valley Sriracha on top.
Daily Green Juice: Kale, Collards, Celery, Carrots, Lemon
Dinner: We were invited to a dinner party in Irvington, NY at the home of Diana and Ark. It was a mini reunion for those of us who had worked at San Jose Civic Light Opera back in the good ol’ days, before it’s name was changed to American Musical Theater and before it’s ultimate demise. That’s another story! Diana made a beautiful meal, starting with Guacamole, Hummus, Crudités and Chips followed by dinner that included a Vegan Lasagna from one of the Moosewood Cookbooks.
We spent a long time chatting at the dinner table about theater, actors, auditions, roles we’ve played and roles we would have liked to have played, had the casting agents made better choices… Diana served desserts after dinner. She made a lovely vegan Fruit Crumble and had Coconut So Delicious for us vegans, and for those interested in trying a new treat.
This may sound cliché but it actually happened – we gathered around the piano and sang some of our favorite show tunes. It was great fun.
