What Vegans Eat – Day 705: Travel Edition

Breakfast: I am enjoying eating fresh Oranges every morning. We began the day with oranges and Earl Grey Tea.

Lunch:
Gary made a gorgeous salad with Mixed Greens, Walnuts, Avocado and lots of fresh Lemon Juice. His nephew Kyle came down to the pool house for a visit and we invited him to join us. I love seeing young folks eat healthy salads!

There was some Gypsy soup remaining that was made by Barb, the producing of the Fiddler On The Roof production we are directing here in California. We added in the leftover Black Beans to it. I offered a small cup to Kyle to try. He said it was okay, but that is tasted like dirt! I told him there were root vegetables in the soup and that may give it a taste of the soil it comes from. Minerals too come from the ground and give us the nutrition we need while providing flavor. I wouldn’t call it dirt but what can you do. I was glad he gave it a try.

Daily Green Juice: Whole Food Campbell Blend. Today’s Campbell Blend was the best ever! It’s made with Kale, Carrots, Ginger and Celery. It is often made with more carrots and less greens. I prefer it very green. Today’s juice was super green and full of ginger. Pow! It was hot. I complimented the person making the juice. Apparently it was his first time making it. He nailed it.
 
Dinner: Gary has a fantastic idea! We love big bowls of soup – especially the kind we get in New York at Green Zenphony or here in California at Vegetarian House or Tofoo Com Chay. It’s comforting and warming, especially in rainy weather. We can’t get too involved cooking in the small space at the pool house. He bought a bunch of bricks of vegetable broth that were on sale, along with Carrots, Green onions, Bok Choy, Greens, Cauliflower, Tofu, Field Roast Sausage, Field Roast Deli Slices Smoke Tomato, Sofie’s Vegan Kitchen Coconut Shrimp and Ancient Harvest Corn and Quinoa Gluten-Free Spaghetti Noodles. We’re ready to put together some of our own big soups. He made the first one with just Vegetables and Field Roast Sausage and Slices. I’m sold.

Evening: We were invited up to the big house for some ice cream. We could not refuse. We had three flavors from NadaMoo! and So Delicious.
