What Vegans Eat – Day 759: Travel Edition

Breakfast: I had been soaking some Red Lentils for more than 24 hours. I cooked them yesterday with Smoked Paprika, lots of Lemon Juice and Garlic. We had a meeting planned this morning at Philz Coffee. I knew I should eat something before having tea so I took a small bowl of the Lentils. Once at Philz, Gary got his favorite Earl Grey and I ordered a Yerba Maté with Vanilla Soy. I love how they top it with fresh Mint!

Lunch: As I mentioned a few days ago, I had scheduled a lot of events this week now that our Fiddler on the Roof production is over. We are still fighting the fatigued. I met my old friend Margee for lunch at Andale. We had a lot to catch up on. I typically order the Tofu Burrito but I got adventurous and ordered the Vegetable Burrito. I liked that it came with some Salad.

Dinner: Did I mention that we were tired? When were we going to feel normal again? I warmed up some of the Red Lentil Stew I had prepared and topped with with Nutritional Yeast. Afterwards I had a few pieces of Dark Chocolate with Peanut Butter. We are out of herb tea so I made a cup of Hot Water with Fresh Lemon Juice. We went to sleep early.
