Breakfast: We often start the day with tea. I had a Darjeeling. Gary has been avoiding caffeine for awhile. He’s been making up for missing his black tea, by having Teeccino with a lot of fun foam, made with soy milk and topped with maple syrup.
After my morning tea, followed by my workout of rowing and hill climbing in my gym, I sat at my desk to be a part of the Food Revolution Summit, answering comments and questions. Gary reheated the Light and Crispy Waffles he made yesterday and served it to me with Strawberry Compote and Cashew Yogurt.
Daily Green Juice: Kale, Collards, Celery, Carrots, Parsley
Dinner: We both were looking forward to more of Gary’s fine Faux Pho! He had lots of Baked Tofu leftover from yesterdays “Faux Pho Feast”. He baked another Sweet Potatoes and added Tempeh Bacon into the mix, altering the recipe a bit by using apple cider vinegar instead soy sauce/tamari. Here are the toppings.

Evening: Feeling a little hungry in the early evening I ate an apple and later a banana.
