Breakfast: Yesterday’s leftover Oatmeal became today’s Crispy Oatmeal Fries, Gary thought about how I preferred my Polenta crispy, rather than creamy and he thought of doing something similar with Oatmeal. It’s genius! And delicious. Something to keep in mind for the future when needed and easy travel food.
I had a big project to finish. It made me hungry by mid morning and I looked for something easy. I found the remaining leftover Creamy Tomato Vegetable Soup and devoured it.
Lunch: Today’s project was burning a lot of brain power. I stopped for a late lunch with Gary. We had Lentil Cabbage Soup. I filled my bowl twice.
The soup was followed by Corn Thins with Avocado, Red Onions, Tomatoes and Almond Yogurt.
Daily Green Juice: Kale, Collards, Celery, Carrots, Ginger, Lemon
Dinner: With my project finished and my brain drained we went out to Green Zenphony. I started with the Red Cabbage and Lemon Juice.
Next was the Barbecued Veggie Ribs, a new favorite. They were exceptional tonight. It is amazing what can be done with bean curd skin. The chef here is quite skilled.
Gary had his Veggie Roast Pork Noodle Soup.
We shared the Chinese Broccoli.
I tried something new – Tofu with Tomato and Basil.
Evening: Yesterday I made a new batch of Frozen Raw Cookies. This is a new recipe – Frozen, Raw, Vanilla Cream Oatmeal Cookies, a raw, vegan version of the It’s It’s.
