Brunch: I got up early (for me) and went into the PRN studio to interview David Yeung of Green Monday. He lives in Hong Kong and is in New York for the Reducetarian Summit. It was a fantastic interview which will air on June 13. I picked up a few things at Trader Joe’s and then head home for a late breakfast. Global warming is here and it’s going up to 90 degrees today. While I am concerned about such warm weather in May what better place to worry during breakfast than on the terrace. I love eating here. We had Rolled Oats, Cacao Nibs, Apples, Flax Seeds, Walnuts, Flaked Coconut, Raisins, Soy Milk and Almond Yogurt. This favorite breakfast bowl of mine tastes even better outdoors.
Lunch: It’s too hot to do anything, let alone cook. I ate two apples.
Daily Green Juice: Kale, Collards, Celery, Carrots, Ginger, Lemon
Dinner: I was in the mood for a stir-fry and made just what I wanted made with Tofu, Red Onions, Leftover Green Zenphony Brown/Red Rice and Chinese Broccoli. I topped mine with Mushrooms.
Evening: These Frozen Raw Vanilla Cheesecake Cookies are yummy and cool. A perfect hot night treat.
