Breakfast: We couldn’t wait to have more Oatcakes! Gary warmed some up and was excited to serve them up like English muffins.
He made a Tofu Scramble just for me. I rehydrated and cooked some dried Shiitake Mushrooms that I added to the scramble along with Red Onion. It was a feast.
Dinner: It’s been hot, hot, hot and a cold dinner is what we wanted. Gary made a delicious batch of Red Pepper Hummus and prepped a giant bowl of Celery Sticks along with Yellow, Purple and Orange Carrots. We also had Kale and Red Cabbage Salad.
Evening: We each had an Apple. It may sound too simple, but I love eating this way.
