What Vegans Eat – Day 97


Lunch: How about a cup of salad for lunch? A simple romaine lettuce salad with avocado and Seed Caesar Dressing was served up in a very large mug.
Daily Green Juice: Kale, Collards, Celery, Carrots, Lemon, Ginger
Dinner: We had yellow split peas that had been soaking for two days with water rinses in between. Even still, these took all day to cook and get soft! But they did and blended up into a lovely soup flavored with spices and a little of everything leftover from the days before, topped it with melty cashew cheese sauce.
Evening: We enjoyed one of our favorite snack: Dry Air Pop with Mint Tea
