What Vegans Eat – Day 125 (Special Travel Edition)

Breakfast: Some cool mint tea that was leftover from another day made for the start of a refreshing morning which included a brisk swim. We had bottled green juices, some celery stalks and watermelon (with seeds!).
 
Lunch: We thought we’d try one of our favorite lunch spots but once in the car the traffic was horrendous so we stayed in town. We went to a new local favorite of ours while staying near Los Gatos: Hanna. Again we had the spring rolls. I love the clean fresh taste of these rolls with tofu and mint.

Gary had the Mango Tofu again.

I tried the String Beans and Shiitake Mushrooms. Fantastic!

Dinner: Zucchinis are everywhere, especially in nephew Josh’s garden where we are staying. We will be eating a lot them. This dinner started with hummus and carrots followed by sautéed zucchini with red onion and rosemary, quinoa with tahini dressing and a baby kale salad.
