Breakfast: I love salad for breakfast. Why don’t I do this more often? This salad consisted of baby greens, cherry tomatoes, walnuts, mashed tofu, and avocado tossed with apple cider vinegar. I had some corn tortillas on the side and Kukicha tea. The mashed tofu mixed with the vinegar has the look, texture and taste of feta.
A little while after the salad I was still hungry. I had a bottled green juice and a sliced banana with tahini. That hit the spot. The one problem I have while traveling is that I tend to use more plastic. I’ll drink water from plastic bottles, green juice and green smoothies from plastic bottles and cups. I am not happy about this but do the best I can. And I do appreciate being able to get green juices and smoothies while on the road.
Lunch: I met my old friend Mike up at Big Basin in Boulder Creek and we took in all the stunning redwood trees along the the trails. I brought along a bottle of green juice, and ate an apple and some almonds.
Dinner: It was late when I got bake to our home-away-from-home in Monte Sereno. We munched on green and red grapes and hummus and flax crackers while Gary cooked up some zucchini with garlic and rosemary served with mashed potatoes.
