Cabbage Salad

The first time I had a cabbage salad (not coleslaw) was at a friend’s home whose family was from Chile. I was about 12 and the chewy chunks of cabbage in the vinegar dressing were different to me than the iceberg lettuce salads I was used to. I picked at it and politely got it down. Now I love cabbage in salads, stir fries, juice, roasted, it’s so versatile. Here is one Cabbage Salad that features our Lemon Hemp Seed Dressing.

Ingredients:
1/2 head cabbage, grated or chopped in thin ribbons
1 tomato, chopped
1 red bell pepper, seeded and chopped
1 carrot, grated
1/4 red onion, diced
2 tablespoons Kalamata olives, chopped fine
1/4 cup Lemon Hemp Seed Dressing

Directions:
In a large bowl mix all the ingredients and toss with the dressing. Serve immediately.

Salad will last 3-4 days refrigerated.
