Hemp seeds are rich in omega-3 fatty acids. The blend up quickly and easily with water to make this creamy dressing.
1/2 cup hemp seeds
1/2 cup water
2 lemons (or limes)
Optional: 1/4 red onion, cut in small chunks
1. With a knife, remove the rind off the lemons (or limes).
2. Remove the pits from the dates.
3. Blend all the ingredients together until creamy. Served immediately.
Dressing may be refrigerated for 3-4 days.
For a richer dressing, replace 1/2 cup hemp seeds with 1/4 cup hemp seeds and 1/4 cup walnuts.
