I bought some cacao nibs for the first time a while back and wasn’t sure what I would do with them. I have been creating recipes that I love using these chocolaty, bitter, crunchy bits and this breakfast bowl is my favorite of all. Mixing the cacao nibs with the fruit and coconut tricks my tongue into thinking I am eating ice cream!
Makes one serving
1 organic apple, cored and chopped (peel if not organic)
1 Tablespoon walnuts, chopped
1 Tablespoon almonds, chopped
1 Tablespoon flax seeds, ground
1 Tablespoon maca powder
2 Tablespoons cacao nibs
1/2 teaspoon vanilla extract
Coconut milk* (about 1/2 cup)
1/2 cup frozen blueberries
1/2 cup frozen strawberries, sliced
*For coconut milk we use Let’s Do Organic Creamed Coconut blended with 3-4 cups of water. This is more water than the package recommends but we like it this way.
In a cereal bowl add the chopped apple, nuts, flax seeds, maca powder and cacao nibs. Give the mixture a stir. Toss in the frozen berries and pour in the coconut milk. Stir it all together with the vanilla extract. Serve immediately.
