What Vegans Eat – Day 618

Brunch: The original plan was to get up early, go to the South Port TKTS booth in Manhattan and pick up some theater tickets and then meet our friend Beth from Costa Rica and her son Buddy who were here for a brief visit. The best laid plans… often go awry. We got up late and decided not to go for the tickets. Beth and Buddy got up later than they planned too! We decided to meet later in the afternoon. In the meanwhile, we were hungry. I heated up the Lentil/Split Pea Vegetable Soup Gary had made, garnished it with Toasted Squash Seeds (from the squash that was cooked a few days before) and served it with a small bowl of Ruby Kraut.

Tea Break: We met Buddy and Beth at our neighborhood organic, vegetarian coffee shop, the Red Pipe. We hadn’t been here in a while. Gary got Jasmine Tea, I got Chinese Green tea and a Peanut Butter Blondie, which we shared and disappeared fast.

Daily Green Juice: Kale, Collards, Celery, Lemon, Ginger
 
Dinner: Clearing out the refrigerator, Gary made a big Kale Salad thinning what was left of the Seed Caesar Dressing and adding Sesame Seeds. I prepared the rice using 1/2 cup of organic Brown Basmati, with 1/4 cup each of heirloom, organic Black and Red Rices. Add a bowl of Lentil/Yellow Spit Pea Vegetable soup to that and half a Sweet Potato and I couldn’t eat it all. I saved the rice for leftovers.
