After making some luscious rich nut milk, use the remaining nut meat for this colorful salad. It’s perfect for a picnic, barbecue, lunchtime sandwich or dip with crackers.
Nut meat leftover from 1 cup nuts used for making REAL Nut Milk
1 cup finely chopped carrots
1 cup finely chopped celery
1 cup finely chopped apples
2 scallions finely chopped (white and green parts)
1/2 cup vegan mayonnaise (optional)
1/2 cup yellow mustard
Mixed vegetables in a bowl with the nut meat. Add in vegan mayonnaise, if using and mustard and mix well. Serve on a bed of lettuce. Makes 6-8 servings.
