Below is a recipe inspired by the Do-si-dos, Peanut Butter Sandwich Girl Scout Cookies. Here natural peanut butter is used, made only from peanuts! Conventional peanut butters contain sugar, hydrogenated oils and a long list of unnecessary ingredients. Other nut or seed butters may be used, like almond butter or sesame tahini, for delicious variations.
Ingredients
For the cookies
4 1/4 cups gluten-free flour
1 2/3 cups rolled oats
2 teaspoons baking soda
1 teaspoons baking powder
3 teaspoons xanthan gum
½ cup olive oil
1 cup peanut butter (smooth or chunky)
1 cup brown sugar
1 cup sugar
4 teaspoons starch (corn, potato, tapioca, or arrowroot)
1/2 teaspoon cream of tartar
6 tablespoons plus 3/4 cups water, divided
2 teaspoons vanilla extract
For the cream filling
1 1/2 cups creamy peanut butter
1 1/2 cups confectioners’ sugar (sifted)
Directions
Preheat oven to 350oF. Line 3 large baking sheet pans with baking paper.
Mix together gluten-free flour, baking powder, baking soda and xanthan gum and set aside.
In a small bowl beat the starch and cream of tartar with 6 tablespoons of water. Mix in remaining 3/4 cups of water and vanilla.
Combine peanut butter and oil in a large mixing bowl or stand mixer. Add brown and white sugars. Beat until creamy. Add starch mixture to the peanut butter batter. Slowly mix in flour mixture.
In a blender, food processor or spice mill, grind the oats into a coarse flour. Add oats to dough and mix or knead until combined.
Take about a tablespoon of cookie dough and shape into a small circle. Place on a large cookie sheet lined with baking paper. Repeat, keeping cookies about 2 inches apart. For a more uniform shape, form the dough into a 2-inch wide log and slice into equal size 1/4-inch-wide pieces. Bake for 10 – 12 minutes, remove from oven. Flatten the tops of cookies slightly with a spatula and let cool.
For the cream filling, mix together peanut butter and powdered sugar to make a dough. With hands, roll dough into small circles and press onto cookies. Top each with another cookie to make a sandwich.
Makes about 48 sandwich cookies.
