This is an essential ingredient in Muhamarra. It’s slightly sweet and sour flavor can enhance many sauces and seasonings. This recipe contains sugar. I plan on reworking it soon with unrefined sweeteners. Stay tuned.
1 cup pomegranate juice.
2 tablespoons lemon juice
2 tablespoons sugar
Mix the ingredients in a small saucepan. Bring to a boil, then cook over low heat, stirring regularly for about an hour.
The mixture will reduce to a little less than half the volume.
Remove from heat. Pour into a container and keep refrigerated.
If you know you will be using pomegranate molasses regularly, you can double or quadruple this recipe.
