This light frothy sauce is so easy to make and absolutely delicious. With a high-powered blender like a Vitamix the cashews do not need to be soaked in advance. A regular blender can be used but then the cashews must be soaked in water for at least 4 hours to soften them first. Soaked cashews must be rinsed before using.
2 cups boiling water
1/2 cups raw cashews
1/4 cup nutritional yeast
3 Tablespoons chickpea miso
Blend the water, cashews and nutritional yeast until smooth.
Add in the miso and continue blending. Serve the sauce over vegetables, on pasta or as a garnish for soups and stews.
