Quinoa Pilaf

I like using spices when I cook grains and vegetables because they add so much flavor. Onion, garlic, turmeric and tomato powders make a quick replacement for vegetable broth.

Ingredients
1 cup quinoa
2 cups water
2 teaspoons onion powder
1 teaspoon garlic powder
1 teaspoon turmeric
1 teaspoon tomato powder
1 yellow onion, chopped
1 celery stalk, chopped
1 bell pepper, seeded and chopped
1/2 cup mushrooms, chopped (optional)
1/4 cup raw almonds, chopped

Description
1. Soak and rinse quinoa in water to remove the saponins. Saponins have a bitter taste that is easily removed by rinsing with water.
2. Add quinoa and 2 cup of water to a saucepan. Add spices, onions, celery and pepper, and mushrooms (if using). Bring to a bowl, reduce heat to low. Cover and simmer, stirring occasionally for 15 minutes.
3. Stir in chopped almonds and cook another five minutes or until quinoa is soft and all the water has been absorbed.
4. Remover from heat and serve.
