The 100th day of What Vegans Eat!
Breakfast: We had the sweetest grapefruit with cold oats, mixed with apples, raisins, flax seeds, sunflower and pumpkin seeds topped with coconut milk and English Breakfast tea.
Daily Green Juice: Kale, Collards, Celery, Carrots, Lemon
I was visited by my best friend Nancy who lives in San Francisco and we took off for Manhattan. After buying up a bunch of great food at my favorite grocery store, Westerly with a groupon I had, we headed uptown to Barnes and Noble for Victoria Moran’s book signing event. She has a new book out called the Good Karma Diet and I’ll be interviewing her and talking about the book later in June.
Dinner: We had some nice noshies at the event but needed some substantial food. We headed up to the newly relocated Blossom on Columbus for Seitan Scallopini:
pan-seared seitan cutlets, white wine, lemon, and caper sauce, truffle mashed potato, sautéed kale and the Soy Bacon Cheeseburger with grilled mushrooms, tapioca cheddar, soy bacon, caramelized onions, lettuce, tomato, chipotle aioli and hand cut french fries. It was worth waiting all day for!
Evening: When I got home, Gary had made beans, cheese sauce with chips, salsa and guac. But we were too stuffed. I nibbled on it and knew it would make a great breakfast. Later I whipped up a quick frozen banana and frozen strawberry treat served with mint tea.
