Breakfast: I think I worship Oats! When you mix it up every day with different fruits and nuts and seeds it is a treat to look forward to. This morning our Rolled Oats were topped with Pumpkin Seeds, Chia Seeds, Blueberries, Almonds, Raisins and Soy Milk.
Lunch: Once or twice a year the Pollination Project has a lunch meeting for people who have received a grant from them. This was the second meeting I was attending and I looked forward to it. It is inspiring to hear about what individuals are doing to help others. I get energized. There was a buffet table of food that was all vegan and gluten-free. There were a few pots of stews or chili that I didn’t try and some gluten-free bread.
When the meeting was over I grabbed some of the two salads and a chocolate chip cookie from Baby Cakes.
Dinner:
Soup can make you smile, especially when it smiles back at you. Gary likes to play with his food. He created this masterpiece with his favorite Sriracha Sauce (Organicville Sky Valley) and Nutritional Yeast.
We finished up the cooked Red Cabbage and Collards we had the other night.
And last but not least the most delicious salad ever. I say that almost every time I eat one of our salads! This one was mixed with our cooked Whole Grain blend of Brown Rice, Red Rice, Black Rice and Millet and tossed with Tahini Dressing.
We had planned a quiet evening at home. Then we got the call that dad had fallen. Gary and I packed our bags and drove to my parents’ house. A paramedic came and got him up. He was weak and just needed a little help. We stayed the night.
