What Vegans Eat – Day 1006


Breakfast: We spent the morning with my parents after rushing to their house last night when my dad had a fall. We got home in the afternoon and had our breakfast, a gorgeous Rolled Oat bowl with Blueberries, Cacao Nibs, Pears, Bananas, Raisins, Chia Seeds and Walnuts and Soy Milk.
Coffee Break: My personal caregiver, Gary, wanted to spoil me with a luxurious Teeccino with Soy Foam and Cinnamon.
Dinner: Gary prepared a feast for me that was comforting and re-energizing all at once. He prepared a Creamy Pesto, this time with walnuts instead of cashews. Gary, a second generation Italian American knows his pesto. He remarked how much he is loving these creamy nut pestos better than the oil-based pestos he grew up with. Me too! He brushed the Baked Tofu with the pesto and we had more for spreading on Roasted Potatoes, Cauliflower and Bell Peppers. We squeezed in a Green Salad on the plate too.
