What Vegans Eat – Day 1025

Breakfast: It’s Fly-Day. We have a late afternoon flight to San Jose and we’ll be starting rehearsals for The Music Man. Somehow, things were moving along well. We finished packing yesterday and despite all the drama and activity, we got to bed at a reasonable hour. We had a stress-free breakfast of Rolled Oats, Granny Smith Apples, Almonds and Blueberries and Soy Milk. After I took this picture I dumped a bunch of ground Flax Seeds on top.

Lunch: I even had time to get a hair cut. Gary got his yesterday. We are ready to fly. Gary packed up food for the plane which included this Arugula Salad that we ended up eating for lunch before we left. The Salad had Black Olives, Cheezehound Feta and the remaining dressing he made with Cheezehound Blue Cheese. It was delicious, leaving a tasty memory of home before we left.

Dinner: Dinner on the plane consisted of homemade Gorp (mixed nuts and dried fruit), Dark Chocolate and Gary’s famous Baked Tofu.

Peanut Butter and Apricot Jam Sandwiches on Sprouted Grain Bread was also in our goody bag.
