What Vegans Eat – Day 1088, Travel Edition


Breakfast: Sometimes I put celery stalks in water to keep them fresh. It looks like this celery got really chilled in the refrigerator. Fortunately the stalks were fine and ready to go into my breakfast smoothie.

This smoothie had Kale, Blueberries, Peanut Butter, Celery and Water. It never looks as good as it tastes.

Lunch: Lunch was quick, simple and easy: a cooked Sweet Potato, a Pear and some Almonds.

After our late rehearsal we made more of that microwavable organic Brown Rice and topped it with Tahini and Smashed Avocados mixed with lots of fresh Lemon Juice. This is our comfort food!

I made some wraps using organic, sprouted, Corn Tortillas, Nori, Cherry Tomatoes, Avocado and Tahini. I will do this again. It’s a great combination of flavors.
