What Vegans Eat – Day 1101, Travel Edition

Lunch: I was meeting Erin today for lunch. She’s a new colleague from the veg world that I am working with who lives in Colorado. Since we are both in the Bay Area it seemed like a good opportunity to meet up. I suggested the Crepe Bistro. They make Vegetarian, Vegan and Gluten-free Crepes and other dishes. I got the Garden Crepe, a Buckwheat Crepe filled with Roasted Eggplant, Tomatoes, Olives, Roasted Bell­ Peppers, and Arugula with house­made Vegan Pesto. It’s gorgeous and satisfying. I also ordered the Green Delight, a green juice with Kale, Cucumber, Spinach, Kale, Ginger and Lemon. I ordered an Avocado Crepe to-go for Gary with Avocado, Carrots, Tomatoes, Spinach, Onions with Lemon Tahini Sauce and added Tofu and got him a Garden Delight too. He was doing the laundry and deserved a treat! We picnicked at the Rose Garden before going to the theatre. Gary ate and then we rested in the sun.

 
Snack:
We had some time before reporting in to the theater and we stopped at Roy’s Station. I got the Matté Chino. Their tea tastes better than any other coffee/tea shop. I think it’s because they add love to all their beverages.

 
Back at the theater I indulged in Clementines available for the cast. Got to keep our immune systems strong!

 
Barb, the theater co-founder, texted me to see if I wanted anything from Blue Mango, a local Thai restaurant. I didn’t think I was hungry but asked for some Spring Rolls. When they arrived, I devoured them. I was very hungry after all. Thanks Barb!

 
Evening: Back at the pool house after the show Gary and I had Sweet Potatoes and Celery, with Pumpkin Spice Rooibos Tea.
