What Vegans Eat – Day 1117


Breakfast: I was certain to make enough Buckwheat Waffles yesterday to have them for today. Gary also presented a “Muesli” that he had mixed together the night before with Rolled Oats, Raisins, Apricots, Walnuts and Flaked Coconut.

Lunch: Today’s Kale Salad was topped with a Garbanzo Bean “tuna” Salad loaded up with Celery, Red Pepper and Onions..

Snack: I’ve been craving coconut. I set a box of Let’s Do Organic Coconut Cream out on the counter a few days ago and I finally made it into Coconut Milk. From that I added Raisins, Vanilla and ice and satisfied my craving with a shake.

Dinner: We had some great flavors in this evening’s meals consisting of Butternut Squash, Sweet Potatoes and Tempeh marinated in an Apricot sauce.
