Breakfast: You always want to make enough for the next day when you make Fruity Corn Waffles. You’ll be glad you did. We were! It’s fun to smash Bananas into the Waffle pockets.
Dinner: We had a Kale Cabbage Salad with Red Onion, Apples and Seed Caesar Dressing served with Rancho Gordo Marcella Beans and Millet. Gary’s sister gave us several varieties of Rancho Gordo beans, grown in California. They are delicious all on their own.
Evening: Back to work later on in the evening, we snacked on Apples and Almonds.
Late Night: I know, I know, eating late is not a good idea. But I eat when hungry and I was hungry. I had a bowl of Rancho Gordo Marcella Beans over leftover Salad and dusted with Nutritional Yeast.
