What Vegans Eat – Day 1174

Breakfast: It’s a special day. I am singing in a concert for the Leonard Bernstein centennial! Today is the first of four of the same program. Gary pampered me before the afternoon event. He served me Teeccino with Soy Foam, dusted with Cinnamon in bed!

 
I knew what I would want for breakfast the night before, Berries and Cream. We had a bag of frozen mix berries in the freezer. I put them in the refrigerator to defrost over night. Gary blended up Cashews and water to make the cream. I topped it with Coconut. Gary went for the heartier option of Oatmeal with Cashew Cream, Berries and Coconut. I didn’t want to sing on a full stomach.

 
Dinner: The concert went well. We had a full house of over 125 people. I hit all my high notes! For dinner we had Potatoes, Green Beans with Onions and a Kale Salad with Tahini Dressing.

 
Evening: I caught up on some work and then we decided to relax and watch Guardians of the Galaxy. I queued up some treats to eat while watching. First I had a Green Juice with Kale, Collards, Celery, Carrots, Lemon and lots of Ginger. Next I had an Apple. Last, since it’s my birthday month and my concert went well I had some Amy E’s Bakery Organic Peanut Brittle from the Natural Candy Store. We have a bunch of candy the Easter Bunny brought a while ago. It will last a long time since we don’t eat candy often.
