Breakfast: I appreciate my calm, easy mornings! The Food Revolution Summit has ended and I am no longer on a schedule. I enjoy working when I want to work, which tends to be pretty much all day anyway! Gary set out the Oatmeal Bar where we could each add our own toppings. I had everything! Apples, Raisins, Pumpkin Seeds, Flax Seeds, Coconut, Almonds, Blueberries and Soy Milk.
Lunch: Lunch was a delicious repeat of meals past, Marinated Tempeh, Sweet Potatoes, Collard Green Salad and topped with Mushrooms.
Dinner:
I flew to Fort Lauderdale for a quick trip, staying with my sister. Knowing I’d be hungry she picked up some Japanese food for us. I started with the Seaweed Salad.
Then I ate some of the Vegetable Maki, saving some for tomorrow. Afterall, tomorrow is another day.
