What Vegans Eat – Day 1181


Breakfast: The Cherry Almond Waffle recipe makes 8 big waffles. We had plenty for breakfast today. Gary made his version of Peanut Butter Cream with Apricot Butter, a little thicker than mine and he added a Banana too.

I saved my Banana to eat with Peanut Butter Cream after finishing my waffles.

Lunch: It was the last day of the nine-day, 7th Annual Food Revolution Summit. I am looking forward to having my late morning/early afternoon back but I have enjoyed hearing the interviews and answering people’s questions. Afterwards I was feeling parched. I cut up a Pineapple and Gary and I ate it all for lunch.

Dinner: Gary had been busy marinated Tempeh and making Green Juice. We feasted in the early evening with marinated Tempeh Slices, Sweet Potatoes, Rancho Gordo Cranberry Beans and a Collard Green/Arugula Salad with Black Olives.
