Lunch: I had a lunch date at Candle Cafe and skipped breakfast in anticipation. I was meeting Lianne, the group leader of the Manhattan PlantPure Pod called Plant Powered Manhattan. My latest favorite at Candle Cafe is the Good Food Plate where you choose the four sides and two dressing you want. Today I went with the Sautéed Wild Mushrooms, the daily curry which was a Tofu Spinach Saag, Garlic Mashed Potatoes and Sautéed Greens. My sauces were the Roasted Vegetable Gravy and Red Pepper-Turmeric Dressing. I left feeling powerfully energized. Was it the food? Was it the conversation? It was both! I left and continued on ready to give a coaching session to someone in the neighborhood.
Dinner: At home Gary and I had our own Good Food Plate made from things we had prepared in the last few days: Pumpkin-Seed Crusted Tempeh Steaks (a variation using marinated Tempeh instead of Tofu in this recipe), Roasted Red Pepper, Collard Greens, and Potatoes and topped with Sauerkraut.
