Breakfast: Once again I went to bed late and got up late. I have so many things I want and need to do before heading west later this month. But I have a new distraction. I am learning Spanish and tuning up my French with a language app. Normally, I read the New York Times in the morning, in bed on my phone. This is much more productive and I am having fun with it. “El hombre come pan…” We’ll see how far I get. When I finally got up I made a single serving of Breakfast Polenta, with Raisins and Flaked Coconut. Gary, who is in California, told me he had Raw Oats with Apples, Raisins and Soy Milk.
Lunch: As I mentioned yesterday, in preparation for leaving in a few weeks to direct Into the Woods with Gary in San Jose, I am clearing out the food we have in the refrigerator, freezer and pantry. I made a Tomato Salad with Black Olives and drizzled the herbed oil the olives were marinating in on top.
Next I took the cooked Whole Grain Blend and Collard Greens remaining in the refrigerator and made them new again. I cooked them with the remaining Thaimeric Tomato Sauce and added in some Tempeh and Porcini Mushroom Powder to supercharge it a bit. The result was a hearty stew.
Snack: Wanting something sweet, I sliced an Orange and enjoyed it. That was all I needed.
Dinner: I finished up the remaining stew I made for lunch. Gary told me, while reading my last couple of blog posts, that he had Black beans with Sautéed Onions, Baked Purple Sweet Potatoes, Quinoa, a Salad of Power Greens with Tahini Dressing and Avocado and two Corn Tortillas. Yup, I want what he’s having!
