Breakfast: With fewer and fewer options in the refrigerator and pantry (I will be traveling soon and don’t want to waste anything) I went to the freezer for my fruit. I made a great smoothie with Frozen Bananas, Blueberries, Raspberries, Flax Seeds and Soy Milk. I had one big glass and later for lunch finished it up.
Dinner: My friend Sheila invited me to dinner at Francia. Karen Davis was in town heading for the National Animal Rights Day New York City where she would be speaking. I never had a chance to sit down casually with her so I was looking forward to it. Sheila started with Cilantro Pancakes and insisted I take one. I did not resist!
Korean restaurants always serve kimchi. We had some. It’s the best!
When at Franchia I typically go for the Vegetarian Stone Bowl with Bean Paste. It was better than ever and I savored every bite. If you had been near you would have heard all the “Mm” sounds coming out of me!
Evening: I could not linger at dinner. I had to get back home to be ready for the Food Revolution Network Power Hour Expert series where I was the expert! It was a wonderful event with lots of great questions. After a long day talking about food, I was hungry. I went to the freezer and took out two gluten-free English Muffins. I heated them up and ate them with Vegan Butter and Nutritional Yeast. This was comfort food for me and a well-deserved treat.
