What Vegans Eat – Day 1265, Travel Edition – Bay Area, CA

Breakfast: It’s our day off that isn’t really a day off. We don’t have a rehearsal today but Gary needs to be at the theater to load in the set. I made a big pot of Steel Cut Oats with Bananas and Raisins to start the day.
 
Dinner: I worked outside at the Whole Foods picnic area. They have WiFi and electricity! When I was done, I did some shopping there, picking up Evolution Green Juices, Millet, Apples and Dry Roasted Peanuts. Gary had to pick up some lumber so he took me back to the house before returning to the theater. I got to cooking. Hell week is beginning and we need to be prepared. I made a Red Lentil Soup; Millet; a stir fry of Red Onions, Chard and Spinach with Balsamic Vinegar; a stew of Black Beans, Corn, Bell Pepper and Zucchini; Garbanzo Bean Flour Flatbread; a Tofu cheese with Nutritional Yeast and Lemon; Lemon Juice and Guacamole. I thought we would feast for dinner and all the leftovers would feed us during the week. I told Gary to pick up some beer on his way home. He found his favorite, Pinkus.

 
We began with Red Lentil Soup.

 
All the other dishes went beautifully together. It felt good to cook today and serve up a dinner with lots of delicious dishes and flavors.
