What Vegans Eat – Day 1267, Travel Edition – Bay Area, CA

Share

Lunch: We had a busy morning with the teens prepping for our run through on the stage this afternoon. I did my whole grain carb loading first, with Steel Cut Oats, Pumpkin Seeds, Apples and Raisins that I had prepped this weekend.

Dinner: I was feeling bad that I had asked our pianist, Mavis, to come in at 1pm when we didn’t start our run through until after 2pm. But we got through the entire show. Now we would do the same with the adults at 6:30pm. I thought I would treat Mavis to dinner at the Crepe Bistro, but she beat me to it and treated me! No matter who pays, dining at the Crepes Bistro is a treat. I always get the best item on the menu, the vegan version of the Royal Veggie with Buckwheat Crepes. It has Roasted Eggplant, Mushrooms, Avocado, Tomatoes, Carrots, Green Onions, Marinated White Onion Sauce, Lemon Tahini Sauce and Spinach. I ate half and saved the rest for Gary, after picking out the mushrooms.

Evening: It was indeed a long, energy-draining evening. We came back to the basement apartment and ate what there was to eat: Green Salad, Sauerkraut, Sautéed Chard/Spinach/Onions and a cup of Red Lentil Soup.

Still hungry, I took a bowl of Millet and the Black Bean Stew with Corn and Peppers.
