What Vegans Eat – Day 1338


Breakfast: Let’s have waffles! We say this a lot around breakfast time and the waffles magically appear. I thought of making some using Millet and I found this great recipe in our REAL collection that I forgot about. We have so many, I can’t keep track. This one begins with whole grains, uncooked, dry millet and steel cut oats that we grind in the Vitamix to make a flour. There’s nothing better than Steel Cut Oats and Millet Waffles especially topped with Bluebbery Banana Coulis.

Dinner: The big batch of soup Gary made yesterday was gobbled up today There’s still more, but it will go fast. I topped mine with Mushrooms and Nutritional Yeast. Just to remind you, or in case you are new to this blog, I buy dried, organic mushrooms in bulk from Fungus Amongus and cook some for the week, that I keep in a jar in the refrigerator. This way I can add mushrooms to anything without mixing them in the dish, because Gary doesn’t like them. Everyone’s happy.
