What Vegans Eat – Day 1353

Breakfast: Our first morning at Heaven on Earth (a.k.a The Stanford Inn by the Sea) we began with a hearty breakfast at the Ravens. Carrot Juice is rich in color, flavor and nutrition.

 
Guess what the Burrito Boy chose? A scrambled Tofu Burrito, mixed Garden Vegetables, Black Beans, Rice, Ravens’ Enchilada Sauce, Cashew Cheese in a Whole Wheat Tortilla with Salsa Cruda, Vegan Sour Cream, and Rosemary Potatoes.

 
I chose the Savory Breakfast Crepe, a Chickpea Crepe with seasonal Vegetables, Cashew Cheese Sauce and Rosemary Potatoes.

 
We went to the town of Mendocino and walked along the ocean. It is one of the most beautiful places on Earth. Don’t tell anyone! Let’s keep it this way. Dan Laderman and Cherie Soria contacted us via Facebook when they realized we were close by. We met them at the Botanical Gardens for a leisurely walk.
 
Tea Break: We got back to the Inn in time for tea. We were not going to miss our treat. I had Chai and Gary chose Mint. Today’s dessert was an Apple Cake with Ice Cream.

 
Dinner: We are eating a lot more than we usually do but how often do we get to indulge in an all-vegan adventure like this? We got to The Ravens at 7:45 pm and were prepared for another dazzling evening. Tonight we would go a little lighter. Dinner began with the Amuse-Bouche, the offering from the chef, small bites of Cucumber topped with fresh, luscious flavors.

 
We both got the Vegetable Soup. It popped with freshness. I loved the Herbs and bits of Zucchini. This soup can cure whatever ails you and nourish your soul.

 
Afterwards we had salads. Gary chose the Caesar with Romaine Lettuce, House-Made Croutons, and Walnut ‘Parmesan’. I went with the Heirloom Tomato Salad with Garden Greens, Fresh Basil, Tofu ‘Feta,’ and Creamy Lemon Vinaigrette. It was a work of art! The colors and flavors were so vibrant.

 
Yes, I had to have dessert! I chose the Crème Brulée, a Vanilla bean and Frangelico coconut custard brulée. Oh my, was it lovely – rich, yet light. Gary, with enormous discipline had a Mint Tea.

 
Tomorrow is our last day here in Paradise. We are missing it already.
