Breakfast: Now I am really going to take it easy. Gary insists I stay in bed all day. That won’t happen but I am lingering. He brought me Vanilla Tea with Coconut Milk which I sipped in bed.
I got an itch to cook. Specifically I wanted to make Staffordshire Oatcakes. We haven’t had them in a while because we had no yeast. We finally picked some up and I was ready to get the batter rising. They came out beautiful.
I wanted a savory spread and quickly mixed together Sesame Tahini, Chickpea Miso, Water and Nutritional Yeast. This is habit-forming! I topped mine with Red Raw Onion. I wished we had Tomatoes, but oh well, next time. Gary suggested spreading Apricot Butter on it, reminding him of a favorite combo of Jam and Cheese from his non vegan days. I think this is even better.
We served them with the remaining Vegetable Soup made from all the unused chopped Vegetables from Thanksgiving and added Garbanzo Beans. This lunch stuck with me for hours.
Dinner: We need Greens but are out. I wanted something raw so I prepped Celery Sticks. Celery Sticks are so nutritious and full of minerals. Crunch!
We had more of today’s Soup.
Yesterday’s Brown Rice Pasta with Spinach/Pumpkin Seed Pesto and Black Olives was gobbled up along with some Sweet Potatoes.
Evening: The Tarte Aux Pommes awaits us in the freezer. We warmed up a couple of Slices.
