What Vegans Eat – Day 1399


Breakfast: We arrived home in New York after a red-eye flight. Were we nuts when we scheduled this flight thinking Gary could get home and go straight to his acting class? We unpacked, had some tea and he was off. Somehow he did it. I was a zombie. At some point in my stupor I made Polenta with Apples, dusted with Flax Seeds, Coconut and Cinnamon. Gary had some when he arrived home.

Lunch: Hunger interrupted my nap. I was glad to have packed the salad greens we didn’t eat in California. I made a quick Tahini Dressing, tossed the greens and ate.

Dinner: There were some nice treats in the freezer that I took out and defrosted, Pinto Beans and a Tempeh Stew. Gary cooked them both together. We also had more salad. Then it was time to catch up on sleep. It’s always good to get back home.
