What Vegans Eat – Day 1398

Breakfast: Tonight we head back to New York on a red eye flight. We are all packed and working on what foods we need to eat this morning, what we are taking with us and what Gary will leave at his dad’s house for when he returns in January. We had our big cups of Rolled Oats, Bananas, Apples, Raisins, Walnuts and Soy Milk.

 
I had a carton of Maitake mushrooms. I steamed them and then devoured them. They were so delicious!

 
Roy’s was so good yesterday we went back for more before Gary had to hold more auditions for his upcoming production of A Midsummer Night’s Dream.

 
Lunch: I decided to stay and work at the theater while Gary ran his auditions. I sat with the co-founder of the theater company Barb as I worked on the computer. She gave us Persimmons from her tree. I told her I didn’t like persimmons at all and she said to try hers since they are crunchy and not mushy. I liked it!

Dinner: The work is done. We are all packed with a bunch of hours to ourselves before we go to the airport. Where hadn’t we been yet on this trip? The Veggie Grill. When we got there the place was packed with a mob of cyclists. It was cool. I ordered the Sonoran Bowl with Organic Quinoa + Seasoned Black Beans, Fire-roasted Carrots, Avocado, Salsa, Jalapenos, Roasted Red Pepper Sauce and Tortilla Strips.

 
Gary tried the new Far East Bowl with Grilled Tofu, Brown Rice, Cilantro Green Curry Sauce, Spicy Broccoli, Green Papaya Salad, Fresno Peppers, Crispy Shallots, Thai Sweet Chili Sauce, Mint+Cilantro. We also brought in our leftovers from the Vegetarian House the day before and finished them up. No waste!

 
Evening: While waiting for the plane we broke into the two Wild and Alive Chocolate Bars Sunny Mueller from the Vegetarian House gave us yesterday. Once on the plane I ate a Purple Sweet Potato we had brought along for a snack.
