What Vegans Eat – Day 140 (Special Travel Edition)

Breakfast: One more day left in paradise! We’re winding down here and decided to have our breakfast inside the poolhouse. The goal today is to use up all the food we’ve purchased before we leave tomorrow. We have our last cold rolled oats with dates, sunflower seeds and soy milk, here in Monte Sereno.

Lunch:
It’s leftovers time! With so much party food from the day before I filled my belly with plump strawberries followed by a pile of plain hummus and bruschetta filling.
 
Dinner: We were on our way to San Francisco to have dinner with our friends Nancy and Jane and their son Robby. We had a lot of food that needed to be eaten so we brought it up to Nancy & Jane’s and Gary and I made a wonderful dinner: Mixed Baby Greens Salad with Chickpeas and Tahini Dressing; Kidney Bean Salad with Tomatoes and Cilantro; Guacamole with Lemon Juice, Cilantro, Tomatoes and Scallions; Roasted Heirloom Yellow Cauliflower, Tomatoes, Garlic and Bell Peppers; Pistou Dressing (olive oil, garlic, basil); Organic Corn Tortillas. The best part was when 4-year-old Robby exclaimed that his soft taco had the best guacamole ever!

For dessert we enjoyed Almond Bites. Just a few bites are enough to satisfy the sweet after dinner craving. Then, after a great game of soccer with Robby, we headed back to the South Bay for our final night in Paradise!
