Breakfast: When I visit my mom I usually arrive at her house hungry because I am rushing to leave our apartment early. Today was no different. When I got to her house I made myself Steel Cut Oats with Raisins, Walnuts and Apples. Mom cut up some Honey Dew for me which was especially sweet and good for melon in December.
Lunch: A few hours later I could tell mom was hungry. I wasn’t but I decided to participate in order to get some healthy food in her. I made a smoothie with Spinach, Almond Milk, Strawberries and Banana and a quick stew made with cooked Brown Rice, a can of Pinto Beans and Tomato Sauce. She ate it all up.
Dinner: Back at home, Gary warmed up some leftovers for dinner and breathed new life into it. We had a few Stuffed Cabbage Rolls from yesterday. Gary took the Brown/Red/Black Rice blend and mixed it with everything he could find – the remaining cabbage filling, the dredging sauce of Tahini and Soy Milk leftover from making Onion Rings and a package of Smiling Hara Hempeh. I have been wanting to try this company’s products ever since I interviewed one of the owners a few years ago. We saw it in the store this week for the first time and grabbed a package.
Evening: Feeling thirsty I thought an Orange would be nice to have. Gary presented me with this peeled beauty.
