Lunch: I believe the act of eating should be a celebration, every day. We strive for that in our home. Today’s first meal was centered around Buckwheat Crepes. I love making them because I am always amazed at how easy they are. It took a while to figure out the secret. It’s all about the flour. Check out the recipe to find out the secret. We created our savory and sweet fillings, Avocado, Tomato Sauce and Red Onions for me, Apricot Butter, Peanut Butter and Bananas for Gary. Barb, the coproducer of the California theater group we work for, gave us a couple of Persimmons (the kind that don’t get mushy) before we left. We had one left and I cut that up to add to the meal.
It’s fun to design and fill your crepe.
I love folding them into a pretty square pocket.
Dinner: It’s Marinated Tempeh and Sweet Potato time, as only Gary can make them.
We also had a Red Lentil Vegetable Soup.
Don’t forget the Kale Salad!
Evening: We finished another big project. Time for a toast!
