What Vegans Eat – Day 1414


Breakfast: We slept in late. It’s Christmas Day. I got up before Gary and made us some Ginger Tumeric Lattes with fresh grated Ginger, Date Paste and Coconut Milk.

Lunch: We didn’t eat our first meal until 5pm! We just were not hungry. But we prepped some food to eat later on in the day. We sat down to a Black Bean Stew with Corn and Red Peppers, topped with Almond Ricotta. If you haven’t tried this Almond Ricotta recipe, you must! It is one of the most delicious things to eat and it goes with everything, savory and sweet.

Dinner: Gary had prepped about two pounds of Brussels Spouts. He made an herbed Vegetable Broth and used it to sauté the Brussels Spouts in. It was gorgeous to look at and the flavors were so good.

I made my new Turnip Cakes recipe.

For a simple but amazing dessert we had Almond Ricotta and Date Paste, a little of each mixed with some Cocoa Powder.

When we were done we made a Christmas Tree of leftovers! Happy Holidays!
