What Vegans Eat – Day 1416


Breakfast: I call this Luxury Hotel Oats. When I pour Coconut Milk on my Rolled Oats I feel like I am dining at a fine hotel restaurant while on vacation. This bowl had Blueberries, Strawberries, Apples and Flax Seeds (on the bottom). I don’t think the hotel would serve Flax Seeds, so I know I must be at home.

Dinner: Who doesn’t love breakfast for dinner? Especially when it’s made by Gary. He whipped up his No-Egg French Omelette with Baked Home Fries, Mashed Avocado and Spicy Tempeh Bacon.

Here’s my plate. Ooh, I wish I had more of this right now.
